3 Cheese Spinach Egg Casserole
Serves/Makes: 10
Submitted by: Ludie, Colorado, USA Ready in: 1-2 hrs
Ingredients:
  • 3 cups shredded cheddar cheese
  • 3 cups shredded mozzarella cheese
  • 6 tablespoons flour
  • 2 cups cottage cheese
  • 1 medium onion, chopped
  • 6 eggs, beaten
  • 6 tablespoons margarine, melted
  • 1 (10 oz.) pkg frozen chopped spinach, thawed, completely drained
Directions: Combine cheddar, mozzarella & cottage cheses. Add flour to cheeses.

Saute onion.

Add to cheeses.

Add eggs, margarine & spinach. Mix well.

Pour into a greased 7" x 12" baking pan.

Bake at 350 degrees F for 60-80 minutes.
