Preheat
oven to 400 degrees F.
In extra-large pan, sauté
onions in oil unit golden
brown. Add chickpeas.
Cover with remaining vegetables.
Combine
sugar and cinnamon and sprinkle
over vegetables; drizzle
oil over the top. Add apple
juice. place in large
oven-to-table casserole
dish and bake uncovered
for about 45 minutes, until
vegetables are soft and
well browned.
For an added dash of color
before serving, scatter
finely chopped chives on
top.
Serve this dish on the same
day you prepare it; the
onions will discolor quite
quickly. |
