Stuffed Peppers - Pareve
Prep time: 20 minutes - Cooking time: 55 minutes
Serves 4
Recipe Ingredients:
  • 2 large red bell peppers
  • 1/2 cup short grain rice
  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, crushed
  • 1 tomato, finely chopped
  • 1 cup grated Cheddar cheese
  • 1/4 cup finely grated parmesan
  • 1/4 cup chopped fresh basil
  • 1/4 cup chopped fresh parsley

Preheat oven to moderate 350 degrees.

Slice the peppers in half lengthways. Add the rice to a pan of boiling water and cook for 12 minutes. Drain, and transfer to a bowl.

Heat the oil in a frying pan, add the onion and cook for 5 - 8 minutes, or until golden. Add the garlic and cook for 1 minute. Add the rice with the

tomato, cheeses, basil and parsley. Season with salt and pepper.

Spoon into the pepper shells and place on a baking sheet. Bake for 30 minutes, or until the peppers are soft and the filling is golden brown.
