Candied Orange Carrots for Rosh Hashanah
Serves: 6
Recipe Ingredients:
  • 2 pounds of baby carrots
  • 2/3 cup orange marmalade
  • 2 Tablespoon brown sugar
  • 2 Tablespoon butter or margarine
  • 3 Tablespoon orange juice
  • Optional: 1/2 cup coarsely chopped toasted pecans

Orange marmalade is the special ingredient in this Rosh Hashannah dish.

Directions

1: Steam or cook carrots until tender.
2: Drain.
3: Transfer carrots to serving bowl
4: Add 2/3 cup orange marmalade, stirring gently until orange marmalade melts
5: Combine brown sugar, butter in a microwaveable dish and cook until brown sugar melts.
6: Stir in pecans and pour over carrot mixture, tossing gently to coat
7: Serve with a slotted spoon
