Recipe Ingredients:
Zucchini Raita
1-2 medium zucchini
1/2 to 1 cup natural yogurt
1/4 teaspoon sea salt
2 tablespoons chopped fresh cilantro
Peel the zucchini and remove the seeds, if large. Place the chunked
zucchini in "ugly pot", and microwave, covered, for 2-3 minutes. Allow
to cool, and then chop more finely. Add the yogurt, salt, and cilantro.
Serve with fish or other spicy meat dishes.
