Zucchini Onion Combination
Recipe Ingredients:
  • 1 or 2 small zucchini, sliced
  • 1 small onion or shallot, cut into chunks
  • 1 tablespoon butter or olive oil
  • 1 tablespoon brown sugar
  • 1/2 teaspoon cornstarch
  • 1/4 teaspoon dry mustard
  • dash of pepper
  • 1 tablespoon vinegar
Combine zucchini and onion in saucepan, add 2 tablespoons water. Cover and steam on medium heat 5-6 minutes. OR Microwave on High, covered, 5 minutes per pound. In small bowl, combine remaining ingredients. Microwave on High 45-60 seconds, until thickened. Pour over cooked vegetables.

It is extremely versatile and can be used in omelets, cakes, cookies, salads, vegetables dishes and stir fries.  If you are hungry and looking for something good to eat choose zucchini.  By the way they are easy to grow in a summer garden.
