Zucchini and Tomato Stir-Fry
Recipe Ingredients:
  • 1 tablespoon vegetable oil
  • 1-2 cloves garlic, slivered
  • 1-2 zucchini, cut into slices or sticks
  • 1-2 tomatoes, cut into chunks
  • 1 tablespoon Chinese Marinade or soy sauce
  • snipped fresh cilantro
Heat oil in wok or stir fry pan, or a deep skillet. Add garlic and cook 30 seconds. Add zucchini and cook 2 minutes, add tomatoes and cook 2-3 minutes. Add marinade, sprinkle on cilantro, and serve.

Zucchini recipes are generally quick and healthy idea for a lunch or dinner food. It is extremely versatile and can be used in omelets, cakes, cookies, salads, vegetables dishes and stir fries.  If you are hungry and looking for something good to eat choose zucchini.  By the way they are easy to grow in a summer garden.
