Wash, cut up vegetables slicing them at an angle. Heat pan, preferable a
wok or stir-fry pan, over medium high heat.
Add vegetables. Using a wooden spoon or
wooden spatula, or super spatula, cook and stir to your desired
doneness, at least 5 minutes.
Remove vegetables to a serving platter
and season as desired. Return pan to heat, add the butter or olive oil.
Add the wine and using a silicone
spatula stir the mixture, bringing up any browned bits in the pan while
reducing the mixture slightly.
