Southern Pickled Black-Eyed Peas
Recipe Ingredients:
  • 2 16 oz. cans black-eyed peas, drained
  • 1 onion, thinly sliced
  • 1/2 cup extra-virgin olive oil
  • 1/4 cup wine vinegar
  • 2 cloves garlic, mashed
  • 1 tablespoon Worcestershire sauce
  • 1/2 teaspoon salt
  • 1 bay leaf
  • 1/2 teaspoon pepper
Put peas in a serving casserole. Combine all other ingredients in s saucepan, or a bowl. Either heat on the burner in the pan until boiling, or microwave the ingredients in the bowl on high for 3 to 5 minutes. Pour over the peas. Refrigerate for several hours, or overnight, to enhance the flavors. Serves 8 lucky people on New Year's Day.
