Wash but do not peel the potatoes. Slice into 1/2 to 3/4 inch slices or
wedges. Place 1 tablespoon smoking chips in the bottom of the Camerons
Stove Top Smoker.
Add the drip pan, and then the rack.
Arrange the potato slices on the rack.
Slide on the lid but leave it open just a
bit. Place over medium high heat and when
the first wisp of smoke appears, slide the
lid all the way shut.
Time for 45 minutes on medium heat. Serve!
