Ingredients:
Sicilian Spinach
1-2 bunches fresh spinach (nearly 1 pound)
1 tablespoon butter
2 tablespoons extra virgin olive oil
2 cloves garlic, minced
2 chopped anchovies
Wash and spin dry spinach. Remove any really large stems. Heat butter
and oil in skillet, add garlic and cook 1-2 minutes. Add very dry
spinach. Cover pan and cook 3-4 minutes to steam spinach. Stir in
chopped anchovies and serve.
