Potato Salad |
Recipe Ingredients:
4-5 white rose or other small white or gold potatoes
1 yam or sweet potato
1 small onion, chopped
5-6 cloves roasted garlic, optional
small pickles, celery pieces, pimento, as desired
1/2 to 3/4 cup regular or no-fat Vidalia Onion Dressing
salt and pepper to taste
snipped fresh parsley and or snipped fresh chives
Wash and scrub the potatoes. Peel the yam or sweet potato, if using, but
leave the skins on the small white ones. Cut the potatoes into
bite-sized pieces. Place in "ugly pot". Cover. Microwave on high, using
5 minutes per pound of vegetable as your guide. When tender, allow to
stand, covered. When cool, take a few sections of potatoes and mash them
with a fork. Place in a bowl and add the dressing. Toss this into the
potatoes with remaining ingredients, garnish and serve.
