Potato Cheese Fingers |
Recipe Ingredients:

1-2 Yukon gold potatoes

grilled halloumi cheese
-
olive oil
-
freshly snipped chives

Scrub the potatoes but do not peel. Place in microwave "ugly pot".
Cover. Microwave on high, using 3 minutes per potato as as guide. Cook
until tender. Cool slightly and then with a sharp knife cut into wedges.
Take a wedge of grilled halloumi, add a wedge of potato, garnish with
chives and drizzle with oil, if desired. Make small ones for grazing
foods, larger ones for a dinner side dish. |

Halloumi is
made by hand from a mix of sheep's and goat's milk. The soft, springy,
oval-shaped curd resembles a fresh mozzarella and has a mild yet tangy
flavor. The best part is that it's so versatile. It can be grilled,
grated, marinated, fried or eaten plain. An unopened packaged will keep
refrigerated for a year and also can be frozen. |
