Peach Salad
Recipe Ingredients:
  • 3/4 cup fruity vinegar
  • 1/2 cup water
  • 6 tablespoons sugar
  • 1 teaspoon salt
  • 6 tablespoons finely chopped fresh mint
  • 3 tablespoons chopped candied ginger
  • 6-9 fresh peaches, peeled and sliced, or 1 large can well-drained canned peaches
  • 2 cups peeled and thinly sliced cucumbers
  • 1-2 baskets cherry tomatoes
  • 1 bunch green onions, thinly sliced, including some of the green stem
  • lettuce leaves and watercress or other garnish
In batter bowl, combine vinegar, water, sugar, and salt. Microwave on high for 3 minutes. Whisk well, making sure that the sugar is dissolved. Add the mint and ginger. Allow to Cool.

Line a 9 by 13 baking dish or large bowl with lettuce leaves. Arrange peaches, cucumbers, cherry tomatoes, and green onion over lettuce. Pour the dressing over all, tossing gently.

Garnish with watercress. Can be served room temperature, or well-chilled.

  • This salad would be great served in the sukkah, as well as at Rosh HaShanah

Jewish festive meals or seudah begin with kiddush, challah and several courses including fish, soup, salad, meat or poultry, side dishes and dessert. I found this recipe several years ago and first served it in our sukkah.  Even the picky eaters in my family loved this salad.
