Parsley and Olive Salad
Recipe Ingredients:
  • 1 cup pitted olives
  • 1/4 cup chopped roasted red bell pepper
  • 1 cup walnuts, toasted and chopped
  • 2 cups coarsely chopped fresh Italian parsley
  • 3 1/2 tablespoons fine olive oil
  • 1 tablespoon fresh lemon juice
  • 1 1/2 teaspoons capers
  • 1 large clove garlic, minced
  • hot pepper flakes
Combine all ingredients, and season to taste. Serve at room temperature.

The third meal of Shabbat is called Shalosh Seudot or Seudah Shlishit.  It is eaten in the late afternoon before sunset.  Some eat a full meal and others prefer, challah or bread (so the blessing of mezonot can be said) and salads.  The Parsley and Olive Salad is quick and easy to prepare and involves no cooking. Serve it with challah or crackers along with some fresh fruit.
