Peel and slice potatoes into slices about
1/4 inch thick. In sauté pan melt enough
butter to coat the bottom of the pan. Add
the potato slices and about 1/4 cup water.
Cook at medium heat about 8-9 minutes, or
until potatoes are tender but not mushy. If
necessary, reduce moisture by heating a few
minutes without the lid. Add 1-2 tablespoons
honey, salt and pepper and cook just until
they are coated and starting to brown a
