Recipe Ingredients:
3 ears fresh ears of corn, kernels cut off
1/2 small cabbage, cut into 1/4 inch cubes
1/2 cup finely chopped onion
1/2 cup diced red bell pepper
1/2 cup diced green bell pepper
1 tablespoon Sweet Hot Mustard
1 cup cider vinegar
1/2 cup honey
1 1/2 teaspoons dry mustard
1 tablespoon sea salt
2 teaspoons, or less, crushed hot red peppers
1 tablespoon chopped fresh ginger
4 large cloves garlic, minced
Combine all ingredients in a 2 - 3 quart bowl. Cover. Microwave on high
5 minutes. Stir. Microwave another 4-5 minutes or until vegetables are
tender. Pour into hot sterilized jars and follow manufacturers
directions for a hot water bath method of canning, or simply cover and
store in refrigerator up to 3 months or so.
