Hasselback: “accordion potatoes” in Ireland’s version of the dish ....
Recipe Ingredients:
  • potatoes
  • olive oil
  • salt and pepper
  • Preheat oven to 400 degrees. Peel potatoes and place one on hasselback form or place them, sliced-side up, in a greased casserole dish. With a very sharp slicing knife, slice potato thinly.
  • The hasselback form will prevent the knife from slicing all the way through. Repeat with remaining potatoes. Arrange potatoes in baking pan.
  • Drizzle with olive oil and sprinkle with salt and pepper to taste.
  • Bake 40-60 minutes, depending on size of potatoes, until tender.

If more browning is desired, place under broiler for a few minutes.
