Grits or Hominy Casserole
Recipe Ingredients:
  • 1 onion, chopped
  • 1 can (large) hominy, drained
  • 1 cup sour cream
  • 1/3 pound Cotswold cheese, chunked
  • 1/2 teaspoon fine sea salt
  • lots of white pepper, or to your taste
  • Paprika or Zip for the top
Preheat oven to 350 degrees. Microwave the chopped onion 3 minutes on high in the casserole dish. Stir in the hominy, sour cream, cheese, salt, and pepper. Sprinkle with paprika or Zip. Bake 20 minutes, or until top is starting to brown. This is really good with some roasted peppers added, as well. (Hot or mild)
