Slice the top off of the head of garlic, exposing just the tips of each
clove. Sprinkle with olive oil. Place in garlic roaster or other
suitable dish, cover, and bake at 350 degrees for about 50 minutes. Set
aside. When cool enough to handle, squeeze the cloves of garlic out of
their skins and mash. In meantime, wash and snip the green beans. In
skillet, place about 2 tablespoons water and bring to boil. Add beans,
cover, steam about 3 minutes. Arrange on plate, toss in the garlic, add
salt, and sprinkle with almonds.
