1 tablespoon olive oil
1-2 large onions, thinly sliced
1 teaspoon good quality balsamic vinegar or a glazing sauce
crumbled Gorgonzola or Stilton, optional
Heat oil in pan until haze forms. Add onion slices, salt, and pepper.
Reduce heat, cook slowly, stirring occasionally, until onions turn limp
and then brown. This may take 20-30 minutes. Add vinegar. Serve over
meat or vegetable burgers. Sprinkle with some of the cheese, if using.
