4-5 sweet potatoes, peeled and sliced or chunked
2 tablespoon butter
1/2 cup brown sugar, firmly packed
2 tablespoons fresh lemon juice
1 teaspoon Sweet Spice Blend, or Pumpkin Pie Spice, optional
sea salt and ground pepper, to taste
Peel potatoes and place in covered dish. Microwave on high, using 5
minutes per pound as a guide, or cook until just barely tender.
underdone is best. Heat a wok or sauté pan on high, and when very hot,
add butter and quickly add brown sugar, lemon juice, and seasonings.
Stir to blend. Add the potatoes, and gently cook and stir several
minutes to glaze.
