Gazpacho
Recipe Ingredients:
  • 2-3 slices French style bread, crusts removed
  • 3-4 red ripe tomatoes (1 pound), chopped
  • 1 green bell pepper, chopped
  • 1 small cucumber, peeled and coarsely chopped
  • 1 small sweet onion, chopped
  • 3-4 cloves garlic, minced
  • 1/2 cup extra-virgin olive oil
  • 1/4 teaspoon fine sea salt, maybe more
  • 1/2 teaspoon sugar
  • 3 tablespoons white wine vinegar
  • 2 tablespoons sherry vinegar
  • 1 cup cold water
  • finely chopped tomato, green pepper, and cucumber for garnish

Soak the bread in water and squeeze out. Place tomatoes, peppers, cucumber, onion, and garlic in food processor and chop, adding oil, salt, sugar, vinegars, and bread. Process until as smooth as possible, doing in two steps if necessary. Stir in the water, taste and add more salt or vinegar until it tastes just right. Chill with an ice cube in each glass or bowl, and add chopped vegetables as garnish.
