Eggplant and Chile Cheese
Recipe Ingredients:
  • 1 large eggplant, peeled and cubed
  • 2 tablespoons water
  • 2 eggs
  • 1/4 cup chopped onion
  • 2 cups fresh bread crumbs
  • 1/2 teaspoon fine sea salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon oregano
  • 1/4 teaspoon paprika
  • 1 cup shredded Cheddar cheese
  • 1/2 cup salsa

Microwave eggplant and water, covered, on High 9 minutes. Drain and mash eggplant. Combine with remaining ingredients. Pour into ring mold. Microwave on High 7-9 minutes, or until set. Garnish with more cheese if desired. Or, preheat oven to 350 degrees. Thoroughly butter the ring mold. Combine as directed and bake 25-30 minutes.
