1-2 summer sweet onions, sliced thinly
1-2 tablespoons olive oil
1-2 tablespoons Gorgonzola or other blue cheese, as desired
thin crackers or bread slices
Heat heavy bottomed sauté pan over medium heat, add olive oil and onion
slices. Cook and stir slowly for 12-15 minutes, or until onions are
browned and soft. Cool. Blend in some cheese, if desired, and serve
dolloped on crackers. This is also great as a potato topping.
