Ingredients:

Evenly shaped Russet baking potatoes

Butter or olive oil
Preheat oven to 425 degrees. Pierce potatoes deeply with sharp fork to
allow steam to escape as they bake, and this helps to make them fluffy.
Place them, not touching, on middle oven
rack and bake 1 hour. Score tops with X's, then pinch gently to force
flesh up.
Sprinkle with salt and pepper, and then
dollop on butter or sour cream.
