Baked Potatoes
Recipe Ingredients:
  • Evenly shaped Russet baking potatoes or try a Jersey Royal
  • Butter or olive oil

Preheat oven to 425 degrees. Pierce potatoes deeply with sharp fork to allow steam to escape as they bake, and this helps to make them fluffy.

Place them, not touching, on middle oven rack and bake 1 hour. Score tops with X's, then pinch gently to force flesh up.

Sprinkle with salt and pepper, and then dollop on butter or sour cream.

A single baked potato will provide nearly 12 per cent of the daily recommended amount of fiber, giving similar levels to whole grain breads, pastas and cereals.

Vitamin B is also present in potatoes and fundamental in helping carbohydrates work properly to provide energy for the body.  Vitamin B also helps maintain a healthy skin and nervous system.
