Avocado And Orange Salad or Appetizer |

Ingredients:
Serve as an appetizer using spinach leaves
as a wrapper

fresh spinach leaves, washed and dried (or open a bag of salad leaves)

5-6 tiny red potatoes, cooked and cooled

1 bunch of radishes, trimmed and thinly sliced

2 tablespoons balsamic vinegar
-
6 tablespoons extra-virgin olive oil
-
1 1/2 teaspoons sugar
-
1 1/2 teaspoons zest of a fresh orange
-
2 oranges, peeled and sliced
-
1-2 avocados, peeled and sliced

Combine spinach, potatoes, and radishes in large bowl. Whisk vinegar and
oil in small glass measuring cup, adding sugar and orange zest. Season
with salt and pepper and pour over the salad and gently toss.
Mound salad on large platter and top with orange and avocado slices.

Winona Ryder (born Winona
Laura Horowitz on October 29, 1971) is
an American born, Academy
Award-nominated, Golden Globe-winning
Actress. She made her screen debut in
Lucas (1986) playing a teenage girl with
a crush on the film's title character.
In 1988 she had what many consider her
breakout role in Beetle Juice as a Goth
teenager named Lydia. She continued with
other roles as angst ridden teenagers,
including an acclaimed performance as
Veronica Sawyer in the black comedy cult
classic Heathers (1989).
Ryder was born in Winona County,
Minnesota and named after the nearby
city of Winona. She was given her middle
name, Laura, because of her parents'
friendship with Aldous Huxley's wife,
Laura Huxley.
Her mother is author Cindy Horowitz (née
Istas), and her father is author and
editor Michael Horowitz. Her paternal
grandparents were Jewish immigrants from
Russia and her maternal grandparents
from Romania. Records show her father's
family were originally named Tomschin
when they arrived on the Kroonland at
Ellis Island in 1906, but went under the
name Horowitz when they resided in
Manhattan. |
