Acorn Squash Rings with Maple Syrup |
Ingredients:

1-2 medium sized acorn squash

butter dollops
-
pure maple syrup
-
sea salt
-
pepper, as desired
Microwave the squash loosely covered with a waxed paper sheet for 2
minutes each.
Set aside to cool enough to handle. Slice the squash into rings about 1
inch thick.
Remove seeds. Cut into half, if desired. Arrange the rings or slices
around a flat plate that is suitable for microwave cooking. Dollop with
butter, drizzle with a little maple syrup, sprinkle with salt and
pepper.
Cover loosely with waxed paper. Microwave on high 4-6 minutes, or until
squash is tender. Garnish and serve. Chutney, apple sauce, apple slices,
etc make great garnish.
