Zucchini Soup (or any other vegetable) (Meat)

Don't let the microwave scare you away from fresh vegetable soup making...it is a wonderful method for 2-4 cups of fast, natural soup

Recipe Ingredients:
  • 4 tablespoons butter or olive oil
  • 1/2 to 1 teaspoon sea salt
  • 1/4 teaspoon black pepper, freshly ground
  • 1/8 teaspoon Zip or cayenne
  • 1/2 teaspoon dry mustard
  • 1 onion, finely chopped
  • 3-4 small zucchini, finely chopped
  • 2-3 cloves garlic, minced
  • 4 tablespoons flour
  • 4 cups good quality chicken stock
  • croutons
In batter bowl, combine butter, salt, pepper, Zip, mustard, onion, zucchini, and garlic. Microwave, covered, on high for 5 minutes.

Stir.

Microwave, covered, another 3-4 minutes to cook the vegetables. Stir in the flour and then the broth. Microwave on high for 5 minutes. Stir.

Microwave another 10-15 minutes on half power.

Taste and correct the seasonings if needed. Serve garnished with croutons.
