Vichyssoise
Dairy Serves 4-6
Recipe Ingredients:
  • 2 sliced leeks
  • 2 chopped potatoes
  • 3 cups vegetable stock
  • 2 oz. butter
  • 1 cup cream
  • salt and pepper
  • Fresh Thyme
Heat 2 oz. butter in a large heavy-based pan. Add 2 sliced leeks, cover and cook over medium heat for 5 minutes. Add 2 chopped potatoes and 3 cups vegetable stock, and bring to a boil. Reduce the heat and simmer for 20 minutes or untiul the potatoes are tender.

Stir in 1 cup cream and season to taste with salt and pepper. Allow to cool slightly. Puree the soup in batches in a blender or foo
Puree the soup in batches in a blender or food processor until smooth. Serve topped with a sprig of thyme.

Cooking Tips: Vichyssoise (vish·e·swäz') is a thick soup made of puréed leeks, onions, potatoes, cream, and chicken stock. It is traditionally served cold, but can also be eaten hot.
