Spinach Borscht
Ingredients:
  • 1 1/2 quarts water
  • 1 pound fresh spinach, cleaned, drained, and coarsely chopped
  • 1 cup chopped onion
  • 2 teaspoons salt
  • 1/8 teaspoon pepper
  • 1/3 cup lemon juice or mild vinegar
  • 1/4 cup packed brown sugar
  • 1 cup dairy sour cream
  • 1 cucumber, diced

Combine first five ingredients in a large saucepan. Bring to boiling; reduce heat and simmer 10 minutes, or until spinach is tender. Add lemon juice or vinegar and sugar. Simmer 5 minutes longer.

Taste and correct seasoning. Chill.

Serve cold with spoonfuls of sour cream and cucumber.
