Minestrone with Turkey (Meat)
Recipe Ingredients:
  • 1/2 pound ground kosher turkey
  • 1/2 teaspoon paprika
  • 1 medium potato, peeled and cut into 1/4 inch cubes
  • 1 medium zucchini, sliced 1/4 inch thick
  • 1 medium carrot, sliced 1/4 inch thick
  • 1 large onion, chopped
  • 1 can (15 or 16 oz.) red kidney beans, drained
  • 1 can (1 lb.) stewed tomatoes or whole tomatoes, broken up with a fork
  • 2 cups tomato juice
  • 1/2 cup broken spaghetti (1 inch pieces)
  • 1 clove garlic, minced or pressed
  • 1/2 head cabbage, shredded
  • 4-1/2 cups water
  • 1 bay leaf
  • 1/2 teaspoon freshly ground pepper
  • 2 teaspoons salt
  • pinch crumbled oregano
In a large casserole, at least 4-quart size, combine all ingredients.

Microwave, covered, on High 20 minutes. Then microwave on Half Power 60 to 70 minutes. Makes 6 to 8 servings.
