Spinach Borscht
Dairy 10 Servings
Recipe Ingredients:
  • 1 1/2 quarts water
  • 2 (10 ounce) packages frozen chopped spinach
  • 1 cup chopped onion
  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon pepper
  • 1/3 cup lemon juice
  • 1/4 cup firmly packed brown sugar
  • 1 cup sour cream
  • 1 cucumber, diced
  • 1 hard boiled egg, sliced, optional

Combine water, spinach, onion, garlic salt and pepper in a saucepan. Bring to a boil. Reduce heat and simmer 10 minutes. Add lemon juice and sugar. Simmer 5 minutes more. Taste and correct seasonings. Regreigerate.

Serve chilled with spoonfuls of sour cream and cucumber mixed into each bowl. Garnish with egg slices, if desired. Serve with pumpernickel or rye bread.
