Sesame + Cilantro Pasta Salad

Recipe Ingredients:

  • 8 oz. farfalle (bow the pasta)
  • Salt
  • 1/2 cup coarsely chopped cilantro
  • 1/4 cup chopped roasted peanuts
  • 1/4 cup thinly sliced scallions
  • 1/4 cup chopped read pepper
  • 1 Tbsp. toasted sesame seeds *

Honey Dressing

  • 1/4 cup olive oil
  • 3 Tbsp. dark sesame oil
  • 3 Tbsp honey
  • 1 Tbsp tamari

Boil pasta in salted water according to directions on package. Drain but do not rinse.

While pasta is cooking, prepare dressing.  Heat olive oil and sesame oil in a saucepan over low heat  for a few minutes.  Add honey and tamari and mix well.

In a large bowl, combine drained pasta with dressing until pasta is well coated.  Add cilantro, peanuts, scallions, and peppers and top with sesame seeds. 

Cover and chill for several hours.

* To toast sesame seeds, preheat over to 350 degrees F.  Spread seeds on baking sheet and bake for 10-15 minutes, shaking pan several times during the process. 
Check frequently to avoid burning.  When golden and fragrant, remove from pan and cool.
