Aliza's Pink Dressing Salad

Recipe Ingredients:

Dressing:

  • 1 medium purple onion, peeled and quartered
  • 1 cup vinegar
  • 2 teaspoons salt
  • ½-3/4 cup sugar
  • 2 cups oil

Salad:

  • 10 oz Romaine lettuce (not mescaline, it is too delicate)
  • 1/3 cup craisins
  • 1/3 cup pine nuts
  • optional: sliced fresh strawberries

 

 

 
Process above in food processor or blender until smooth.  Taste and correct sugar and salt if necessary. 
Pour into quart size bottle.  Add  2 cups oil.  Shake.  Do not process with oil or it will get a milky look.

Dressing keeps for at least a month in the fridge.  Toss salad with about 1/3 cup or more dressing to taste.
