Perfect Picnic Potato Salad

Recipe Ingredients:

  • 2 lb. red bliss potatoes
  • 1/2 cup finely chopped red bell peppers
  • 1/2 cup finely chopped red onion
  • 2 Tbsp. finely chopped fresh dill

Dressing

  • 1/2 cup olive oil
  • 2 Tbsp. Dijon mustard
  • 2 Tbsp. white wine vinegar
  • 1-2 Tbsp. mayonnaise
  • Salt and freshly ground pepper to taste

Perfect Picnic Potato SaladServes 8 - 10

Cook potatoes in water until fork-tender.  Drain, rinse with cold water, and drain again. 

Cut each potato into quarters or into eights if large.  Whisk together dressing ingredients. 

With a rubber spatula, gently combine potatoes, peppers, onion, dill, and dressing. 

Cover and refrigerated 2 hours or overnight.
