Fresh Tomato Salad

Recipe Ingredients:

  • 6 large ripe tomatoes
  • 4 Tbsp. olive oil
  • 1/2 cup sliced scallions
  • 1/4 cup chopped flat-leaf parsley
  • 1/4 cup chopped fresh basil + some whole leaves for garnish (optional)
  • 2-3 cloves garlic, minced
  • salt and pepper to taste
  • Kalamata olives (optional)

Severs 8 to 10

Overlap tomato slices on serving platter and drizzle with olive oil.  Sprinkle with scallions, parsley, basil, and garlic.  Season with salt and pepper.  Place olives around the rim of the platter if using. Garnish with basil leaves leaves if desired.
