Recipe Ingredients:

Tbsp. Frozen orange
juice concentrate, thawed

Tbsp.
Olive Oil

1/3
cup soy sauce

scallions, thinly sliced

Tbsp. finely minced
fresh gingerroot

6-oz pieces of
salmon, filleted, skin
removed
-
Package Carrots, cut
into sticks
-
Chives,
snipped into small pieces

Combine first six
Ingredients
and pour over fish in glass
baking dish.
Cover and chill at least 1
hour
Remove salmon, reserving
marinade. Grill or broil 4
inches from heat source,
turning once and brushing
several times with
marinade. Cook until fish
is thoroughly done and
flakes easily when tested
with fork, about 20-25
minutes. Discard remaining
marinade.
While fish is cooking, toses
carrot sticks with olive oil
and place in small baking
pan. During 3-5 minutes of
cooking, place carrots in
oven. Before serving,
scatter carrots over salmon
and sprinkle with chives.
