Queen Esther Cookies
Ingredients:
1/2 lb. butter
1/2 cup sugar
1 egg
2-1/2 cups flour
Pinch of salt
1/2 teaspoon baking soda
1/2 teaspoon vanilla
1 teaspoon lemon juice
Grated peel of 1/2 lemon

 

Beat butter with sugar until creamed and add egg. Sift dry ingredients and add them slowly to the cream. Add vanilla, lemon juice and peel.

Open the dough and cut with Purim figures (Queen Esther, Haman hats, rattles, etc). Put on cookie sheet and put in the refrigerator overnight.

Bake in moderate oven (350 degrees) for 10 minutes, until golden. Let it cool and pour a sugar icing over the cookies and decorate with colored candies.
