LOW-SUGAR

1C dried
apricots
-
1.5 C water

1Tbsp. cornstarch

7-10 packs sweetener ( one which can
withstand baking)

1 Tbsp water
-
1/4 tsp lemon juice
|
Soak apricots in 1.5 C water for 5 minutes
and then microwave 3-5 minutes. Process the
mixture in a food processor until well
chopped. Dissolve corn starch and sweetener
in the water and lemon juice and add to
apricot mixture. This mixture does not ooze
out of the dough.
Pastry: Use frozen filo dough and follow the
directions for filo cups, pie and tart
shells on the side of the box. Keep filo
dough not actually in use at the moment
wrapped in plastic and a damp towel to
prevent drying out. Layer 4 filo sheets,
lightly spraying each with vegetable oil
spray. Cut circles from filo using as SHARP
a round cookie cutter as you have. Carefully
remove excess around circles put a small
amount of apricot spread on each circle and
shape as for hamantaschen.
Bake in 375 degree oven until nicely
browned- 8-12 minutes
Cookies are very fragile. |
