Vegetable Matzah Kugel

Recipe Ingredients:

1/2 cup
Zucchini, grated

1/2 cup Parsnip, grated

1/2 cup Carrot, grated

1 Sweet potato, grated peeled

1 White potato, grated peeled

1/4 cup Onion, finely chopped

1/2 cup Raw spinach

3 Egg whites

3 tablespoons Vegetable oil

1/2 teaspoon Garlic powder

1/4 teaspoon Black pepper

1 teaspoon No-salt herb seasoning

1 cup Defatted chicken broth
-
2 cups Matzo farfel
-
1 tablespoon Matzo meal, (optional)

Spray a 7- 1/2" x 11" pan with nonstick
vegetable oil. Mix vegetables in a large
bowl. Add egg whites, oil, garlic powder,
pepper, and herb seasoning. Mix well. Add
broth and farfel. Place mixture in prepared
pan and bake, covered, in a 350 degrees F
oven for 20 minutes. Remove cover and bake
35 minutes longer. Run under broiler for a
few minutes to top brown lightly. Makes 12
servings.
NOTE: Best to make this a day in advance.
Refrigerate and heat through again before
serving. |
