Passover Vegetable Pudding
Yield: 6 servings
Recipe Ingredients:
  • 2 cup zucchini
  • 2 cup potato
  • 2 cup carrots
  • 1 small onion
  • 2 eggs, beaten
  • Salt and pepper, to taste
  • 1/3 cup matzoh meal
  • 1/4 cup oil

Peel and grate raw vegetables. (Zucchini need not be peeled.) Add and combine eggs, salt, pepper and matzoh meal. Heat oil in 2- quart baking dish.

Pour pudding into heated oil.

Bake 45-60 minutes at 375 degrees F.
