Pizza I

CRUST
- 1 lb.
matzah -- broken up
- salt &
pepper -- to taste
- 3 eggs
-- lightly beaten
- 1/4 cup
vegetable oil
SAUCE
-
vegetable oil
- 1 large
onion -- chopped
- 6 oz.
tomato paste
- 12 oz.
water
- 1 tsp.
basil
- salt &
pepper -- to taste
- 3 cups
shredded mozzarella cheese

Toppings: sliced mushrooms, sliced olives,
anchovies, chopped red or green pepper,
tuna

Soak the
matzah in warm water -- squeeze dry. Mix
together with eggs, salt, pepper, and oil.
Press mixture out on an oiled pizza pan,
leaving a little edge on the side. Bake in a
350F oven for 30 minutes. (Crust can be
prepared ahead and frozen.) Saute onion and
garlic in 1-2 Tbsp oil. Add tomato paste and
water, season with basil, salt, and pepper.
Cook for 3 minutes; pour over the crust.
Sprinkle with cheese and garnish with any
options as desired. Bake in oven until
cheese is bubbly; 15 minutes. |
