Passover Blueberry muffins
Dairy or Pareve Yields 1 dozen muffins
Recipe Ingredients:
  • 1/2 cup or pareve margarine, softened
  • 1 cup sugar
  • 3 eggs
  • 1/4 teaspoon salt
  • 1/4 cup potato starch
  • 1/2 cup matzo cake meal
  • 1 teaspoon lemon juice
  • 1 heaping cup fresh or frozen blueberries, rinsed, drained and patted dry cinnamon sugar

Preheat oven to 400 degrees. Cream butter and sugar in a mixing bowl until light and fluffy. Add eggs one at a time, beating well after each addition. Fold in salt, potato starch and cake meal.

Add lemon juice. Fold in blueberries carefully. Pour into paper-lined or well-greased muffin cups and sprinkle with cinnamon sugar. Bake until lightly browned, about 20 minutes.

Variation: Substitute sliced strawberries or raspberries for blueberries.
