Passover Beef Roll
Yield: 4 servings
Recipe Ingredients:
  • 2 lbs. ground beef
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 eggs
  • 1 package potato pancake mix
  • 3/4 cup matzah meal
  • 3/4 can tomato and mushroom sauce

Combine potato pancake mix with one egg, 1 cup water and 1 tablespoon matzah meal. Mix meat with all ingredients, except pancake mixture. Mix well together.

Roll out 1/2 - inch thick.

Put potato pancake mix on top. Roll up like jelly roll. Pour remaining tomato sauce over top. Bake at 350 degrees for 1 hour.

comments: I tried this recipe and found the following: Extremely easy to make.

Fairly tasty--next time will try sautéing a chopped onion and some celery to add to the meat mixture.

At one hour of baking on a sheet covered with tin foil, the bottom burned slightly...will reduce baking time by 15 minutes and check to see if it is done.

Will serve with a red wine
