Passover Meringue Torte

Recipe Ingredients:
  • 4 egg whites
  • 1/4 tsp salt
  • 3/4 cup plus 2 tablespoons sugar, divided matzo cake meal
  • 1/2 cup shaved semisweet chocolate, divided
  • 1 cup whipping cream
Orange filling:
  • 4 egg yolks
  • 1/3 cup sugar
  • 1 teaspoon grated lemon peel
  • 1 teaspoon grated orange peel
  • 2 tablespoons orange juice
  • 1 tablespoon lemon juice

Preheat oven to 275 degrees. Beat egg whites in a large bowl until frothy. Add salt and continue beating until stiff. Gradually add 3/4 cup sugar,

2 tablespoons at a time, beating well after each addition. Spread in a well-greased 9-inch pie pan which has been dusted with matzo cake meal.

Make edges slightly higher than center. Bake for 1 hour. Cool

For orange filling, beat egg yolks in a small bowl until thick and lemon-colored. Gradually add 1/3 cup sugar. Add remaining ingredients and pour

into top of a double boiler. Cook over hot water until thick, stirring constantly. Cool.

Sprinkle 1/4 cup shaved chocolate over meringue. Whip cream and 2 tablespoons sugar until stiff. Spread half of whipped cream over chocolate.

Pour cooled filling over cream and gently spread. Top with remaining whipped cream and sprinkle with remaining chocolate.
