Festive Passover Mandel Bread

Recipe Ingredients:

  • 3 eggs
  • 1 cup sugar
  • 3/4 cup vegetable oil
  • 1/2 teaspoon salt
  • 2 cups matzo cake meal
  • 1/2 cup potato starch
  • 2 tablespoons matzo meal
  • 2 tablespoons lemon juice
  • 1 teaspoon vanilla or almond extract
  • 1 cup chopped nuts
  • 1/4 cup sugar
  • 1/2 teaspoon cinnamon

Beat eggs in a mixing bowl until light. Add sugar, oil and salt and beat until thick and lemon-colored. Add matzo cake meal, potato starch and

matzo meal. Blend well. Add juice, extract and nuts. Cover and refrigerate overnight.

The following day, oil hands and divide dough into 6 logs. Place on 2 greased baking sheets and lightly score tops. Do not cut through. Bake in a

preheated 375 degree oven for 20 to 25 minutes. Remove from oven and cut into 1/2 inch slices. Place slices flat on baking sheets, cut-side

down. Combine sugar and cinnamon and sprinkle lightly over each slice. Bake an additional 10 to 15 minutes, until slices are brown and crisp
