Passover Cheese Lorraine
Dairy - Serves 8
Recipe Ingredients:
  • 2 tablespoons butter
  • 1 medium onion, coarsely chopped
  • 1/2 pound mushrooms, sliced
  • 3 eggs
  • 2 cups milk
  • 4 matzos, broken into small pieces
  • 1/2 pound grated cheddar cheese or mixed cheese
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

 

Melt butter in medium skillet over medium-high heat. sauté onion until soft. Add mushrooms and sauté until limp.

Transfer to a quiche pan or 9-inch pie pan which has been coated with nonstick vegetable spray.

Beat eggs in large bowl. Add milk, matzo and cheese and stir to combine. Season with salt and pepper.

Pour over mushroom mixture and bake in preheated 350 degree oven until set, about 45 minutes.

Variation: Add cooked, drained spinach.
