Cake-Like Passover Brownies
Diary or Pareve - Yields 12 brownies

Recipe Ingredients:

  • 1/2 cup butter or pareve margarine, softened
  • 1 1/2 cups sugar
  • 4 eggs
  • 7 tablespoons cocoa, sifted
  • 1/2 cup milk or water
  • 1 cup matzo cake meal
  • 1/2 teaspoon salt
  • 1/2 cup chopped pecans

Preheat oven to 350 degrees.

Cream butter and sugar in a medium mixing bowl until light and fluffy.

Add eggs one at a time, blending well after each addition.

Add cocoa and mix well.

Combine matzo cake meal and salt and add to butter mixture alternately with milk. Beat until well blended.

Fold in nuts.

Pour into a greased 9-inch square baking pan. Bake until a toothpick inserted in center comes out clean, 35 to 40 minutes. Cool before cutting into squares.
