Simcha Nuts
Recipe Ingredients:
  • 1 egg white
  • 1 tablespoon butter or pareve margarine, melted
  • 1/2 teaspoon vanilla
  • 1 pound pecan halves
  • 1/2 cup sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • Beat egg white in a medium bowl with a whisk until foamy. 
  • Fold in melted butter and vanilla. Add nuts and coat completely. 
  • Combine sugar, cinnamon and salt. 
  • Fold into nuts and stir to coat. 
  • Spread nuts in a single layer on jelly roll pan lined with foil and coated with non-stick vegetable spray. 
  • Bake in preheated 250 degree oven for 25 minutes.
  • Stir nuts, then continue baking until very crisp and dry, about 20 more minutes.
